Ingredients

♦ To Be Mixed Into A Marinade

♦ 1/2 tsp lemon juice

♦ 1/2 tsp chilli powder

♦ 1/2 tsp roasted and ground cumin seeds (jeera)

♦ 3/4 cup fresh curds (dahi)

♦ Capsicum 2

♦ Tomatoes 2

♦ 1/2 tsp ginger (adrak) paste

♦ 1/2 tsp green chilli paste

♦ 1 tsp black peppercorns (kalimirch) powder

♦ 1/2 tsp carom seeds (ajwain)

♦ 1 tsp fennel seeds (saunf) powder

♦ 3/4 tsp turmeric powder (haldi)

♦ 1/3 cup besan (bengal gram flour)

♦ 1 tsp oil

♦ salt to taste

♦ a few strands of VDR saffron (kesar) strands , dissolved in 1 tbsp milk

 

Other Ingredients

♦ 12 paneer (cottage cheese) cut into 50 mm. (2”) cubes

♦ 1 tbsp oil for cooking

♦ 1 tsp chaat masala

♦ 1 tbsp finely chopped coriander (dhania)

 

Preparation

Preparation Time: 10 mins
Cooking Time: 15 mins
Makes 4 servings

  1. Combine the paneer along with de-seeded capsicum and tomatoes and marinade in a bowl, toss gently and keep aside to marinate for atleast ½ hour.
  2. Arrange 3 pieces of paneer along with 2-3 pieces of tomatoes and capsicum in the skewer. Repeat with the remaining ingredients to make 3 more stays.
  3. Heat a non- stick tava and cook the skewer on a medium flame using oil till he paneer is light brown in colour from all sides. Serve immediately sprinkled with chaat masala and coriander.
  4. Serve hot with onion rings and mint chutney.
